Rachel
Woolcott began her start in the culinary field in 1989 while attending
the University of Colorado at Boulder. The desire to enter the
profession full time brought her to California in 1991. While
working with the chef of the Ritz-Carlton in Marina del
Ray, they started a fine dining catering and home chef
service. Upon returning to Colorado two years later, Woolcott
then accepted a position with Cynthia Anderson, the Executive-Chef
of the Arrowhead Country Club. Developing her skills further after
one season at the country club, she excepted another sous-chef
position at City Spirt Restaurant in downtown
Denver. There she honed her management and cooking skills as she
was responsible for the employees, all daily specials, food purchasing
and costing and inventory. As Woolcott's culinary foundation strengthened,
she found it necessary to move on to a larger city with a more
eclectic restaurant venue.
In
1993, she moved to Boston, Massachusetts, where she knew she would
have the best opportunity to meet and work with some of the greatest
chefs in the country. She accepted a kitchen position at a small
neighborhood restaurant in the 'South End' called 'On
The Park'. She worked with Chef/Owner Lisa Martel. From
there she moved to 'Dali' restaurant in Somerville
and worked with Chef Jorge Ramerez. Within 2 years there, Woolcott
worked her way into an Executive Sous chef position and was then
asked to help open their new restaurant on Newbury St. called
'Tapeo'.
The
next step for Woolcott was a move into an Executive Chef position
at 'On The Park' where she participated in the
Spinazola Event and the Undiscovered Chefs Events. While there,
she developed her own recipes and continued to define her own
style of cuisine. It was at this point in 1997 that Woolcott felt
a move to San Francisco would further enhance her career. A few
short term kitchen positions, including one at the Buckeye
Road House, landed her in the South Bay (south of San
Francisco) where she accepted a Sous Chef position at Le
Mouton Noir in Saratoga. Next, there was an Executive
Chef position at and Asian-Fusion restaurant called Masu.
It wasn't long after, she met David Kinch who was the owner/chef
of the French-Catalan restaurant called Restaurant Sent
Sovi located just down the street. She accepted the position
of Garde Manager Chef, taking the opportunity to not only design,
prepare and execute her own dishes but to help develop the pastry
dishes as well. While in California, Woolcott also continued with
private catering, private monthly wine dinners and event planning
and production for other catering companies. She is currently
the chef/owner of Aix Restaurant in Denver which
she opened with Cyd Anderson in August of 2001, and became sole
proprietor in December 2006.
